Tempura Niitome | Tempura Restaurant in Azabu, Tokyo

TEMPURA NIITOME
Living Batter
The restaurant, long supported in Nagoya, moved to Azabudai Hills in 2023. The course changes with the seasons, and each item is fried and served one at a time.
The eight-seat counter is made from a single plank of chestnut wood. Only a pane of glass separates it from the frying pot, so the sound of the oil and the movements of the chef are right in front of you.
Batter
The flour is rested at -40 to -60°C and combined with eggs only moments before use. This is the living batter the chef arrived at over many years of work.
Oil
The frying oil is 100% Taihaku sesame oil. The temperature is adjusted finely, so that the aroma, the flavor and the moisture of the ingredient remain.
Space
Sukiya-zukuri architecture is combined with Edo-period antiques. From the bamboo-lined entrance to the seats, every detail has been considered.
